Prep-Ahead Healing Hot Cocoa Trimmy Mix (p 467)

I’ve never been a coffee drinker, but about a year ago I decided to start drinking a cup of coffee a day because I’ve read several things about how coffee (in moderation and without all of the sugar & syrups, of course) can actually have health benefits. I can’t say I love the taste, yet, but I’ve gotten to the point where I do enjoy my morning cup, and I make that happen by adding the dry mix from the Hot Cocoa Trimmy Mix on pg 467 and some half & half (hey, I started out with heavy cream, so this is better, right?). The collagen in this mix adds protein and it’s own health benefits to my daily cuppa, plus the cocoa powder and the half & half make it pretty tasty. A lot of days (when I have to be at work by 6 am or earlier!) this is all I have for breakfast, but it works alongside any S meal, and if I decide to have an E breakfast I just replace the half & half with almond milk. It’s not quite as enjoyable, but it works. The Hot Cocoa Trimmy Mix added to hot water or almond milk really does make a pretty decent cup of hot cocoa on a cold day, too, and since hot chocolate has always been my hot drink of choice, I was happy to find a healthy replacement and always keep a tin of this mix on hand.

This is definitely a 5 star.

Open-face Turkey Crunch Lunch (p 299)

I opted for the E version of this for lunch today, using 4 of the Wasa rye crackers, 2 wedges of Laughing Cow cheese, turkey, and pickles. I like the regular Laughing Cow (the flavor actually reminds me of Velveeta), not a big fan of the garlic & herb though (at least not this Aldi brand version) so the one pictured here had been sitting in my fridge for long enough that it had dried out. Luckily I work at a grocery store, so I ran and bought a package of the spicy pepper jack, and used a wedge of that on 2 of my crackers. It was yummy with just enough kick to feel it in the back of my throat! This lunch, with a sliced mini cucumber on the side for some freshness and a healthy, veggie substitute for chips, was plenty filling. I could easily have dropped it back to only 3 crackers.

This one also gets 5 stars with bonus points for the fact that it was easy to pack for lunch at work.

Dreamy Chicken Lazone (p 50) served over Troodles (p 264)

It turns out I’ve made this once before. It is pretty easy to make, and packs a lot of flavor. I have a confession to make, too. My husband and I don’t like the slimy mouth-feel of dishes thickened with Gluccie. Like really hate it! I always use the option to substitute xanthan gum for the Gluccie. The slightly runny sauce definitely begs to be served over something that can soak it up.  If you’re eating crossover meals this would probably be delicious over brown rice. I served it over Troodles (zucchini noodles) and that added veggies for what turned out as a pretty decent, healthy S dinner. I was comfortably full after this plate that included half of a decent-sized zucchini and 3 chicken tenders.

The Chicken Lazone gets 4 stars. I’ll probably make it again, but it’s not at the top. The Troodles, if you look at them as a veggie, and don’t try to pretend they’re actually noodles, also get 4 stars.

The Bai water isn’t part of the recipe, but it is my #1 favorite thing to drink besides plain ole water (which is what I drink 90% of the time). I love all of the coconut Bai waters, but the coconut mango is my favorite. It’s sweetened with erythritol and Stevia, so it’s on-plan. Add half a scoop of collagen to a bottle of Bai, give it a really good shake, and it works as the protein source in either an E or an S snack. I drank this one, minus the collagen, while I was cooking dinner.
