Big Bowl Egg Scram (pg 331)
Look at all of the amazing veggies in this breakfast! How can you not get healthier when you start your day with this many veggies? I have to admit I was a little skeptical about the recipe. It has a LOT of random ingredients in it. Liquid smoke? Zucchini in my eggs? I had some in the fridge, so I used it. I don’t like apple cider vinegar, but I know its good for me, so I used it, too. :p The only ones I didn’t have were the miso and chipotle powder. My husband didn’t think it was going to be enough egg for the veggies, so I dumped in some carton egg whites. Also I had some cotija cheese I bought to try out. It reminded me a lot of parmesan, so that’s the cheese I sprinkled over the top. I even followed the instructions and put coconut oil on top. I REALLY thought I was going to just tolerate eating this dish so I could post a review, write it off, and move on. I was wrong. I loved it! The only thing I changed the next time I made it was leaving out the added water because all of the veggies add plenty of moisture. One of the greatest things about this is that you can use pretty much any non-starchy veggies you have on hand.
This recipe gets 5 stars all the way. It’s an excellent way to add more veggies to my diet.
Hubby Lovin’ Chicken (p 218)
I had some bone-in chicken breast in my freezer that I needed to use, so that’s what came out for this dinner. This was easy to put together. The flavor wasn’t amazing, but it was good. The chicken was super moist. You will definitely need something alongside this piece of chicken to make a meal. Not sure what happened to my photo, I guess I’ll have to take one if I make this again.
This gets 4 stars. It was good, but not great. It’s best feature was how moist the meat was.
