BLT Wraps (p 296)

What’s not to love about bacon, turkey, and avocado. Throw in some tomato and laughing cow cheese; wrap it all in a romaine lettuce leaves and what you have is a yummy, filling, and easy lunch. Even better is that it’s easy to adjust the ingredient a little to make it as an S or an FP. Use the FP version and add some fruit and you have an E. I took the ingredients to work and built them there during my break. I’m always looking for easy lunches, because working at a grocery store makes it way to easy to buy junk on break if I don’t already have a plan. This will definitely be a keeper.

This recipe gets 5 stars. It’s great as is, and super versatile.

Deconstructed Stuffed Peppers (p 54)

My husband is a mostly willing participant in my THM adventures as long as the food is good, but he approaches most of the new recipes I try with trepidation. We’ve had some pretty bad misfires over the years. 😀 We’ve also had some big wins. This recipe is one of those wins. He likes this recipe so much he actually requests it, and loves to have the leftovers for lunch! The recipe is way easier than actually stuffing green peppers. I will note that I substitute a bag of riced cauliflower for the THM or Not Naughty Rice that the recipe calls for, and I used the jar of pizza sauce from Walmart, cause its easy.

One of the optional ingredients in this recipe is Nutritional Yeast. If you have not yet invested in some do it! Read about the benefits of nutritional yeast on page 37 of the book. Its great in eggs (especially to add flavor to egg whites) and on veggies. There are a lot of places to get it. My first purchase I made at Whole Foods because I had no idea what I was looking for and it seemed like something they would have. I about had a heart attack when I saw that it was over $11 per pound in their bulk foods section until I figured out that its the consistency of potato flakes so the scoop I bought to try it out cost about 75 cents.

This recipe gets 5 stars, not from me (I’m not a huge green pepper fan so I give it a 3), but from my husband.
