Wake Up Trim Down Banana Bars (p 344)

If, like me, you struggle to get enough E meals in your week, this recipe is great to have on hand. These bars have Oolong tea, which is a great fat burner, in them.  They were pretty simple to make, and they were pretty tasty, too. I will warn you to store the extras in the fridge if they last more than a couple days, my last few ended up moldy. 🙁 Part of the protein in these bars comes from the Integral Collagen. This has become one of my THM ingredient must-haves.

I give this recipe 4 stars. They’re easy to make, and decently tasty.

Cabbage Roll in a Bowl (p 57)

Ok, to start with, I have to admit that I went into this recipe thinking Egg Roll, not Cabbage Roll. Yeah…no, not the same thing, lol. This recipe is full of veggies and super healthy. However, the flavor was not our favorite. The prominent flavor is the Worcestershire sauce. I don’t mind that flavor, but it just wasn’t a win for me in this.

Because it is full of healthy veggies, and more than just edible 😉 I give this recipe 3 stars, and so does my husband.

Sugar Free, Low Carb Chocolate Ice Cream (yes, please!)

My husband got me this ice cream maker attachment for my Kitchen Aid mixer for Christmas and I LOVE it! I have tried several ice cream recipes and most of them are ok, but I hadn’t found any I loved. Then I modified a couple things I had learned along the way and I came up with this recipe. This is a really heavy S meal, so it should be a treat on your weight loss journey, probably not an every day dessert. When it’s done in the ice cream maker, before you put it in the freezer it reminds me a lot of a Wendy’s Frosty. I ate my bowl with some of the chocolate cookies from Post 5 that I didn’t really care for and they were pretty good together.

Chocolate Ice Cream (Sugar-free, low carb, THM S)

  • 2/3 C Gentle Sweet
  • 1/3 C Cocoa Powder
  • 1 T vegetable glycerine
  • 3/4 T vodka
  • 2 C heavy cream
  • 2 C almond milk
  • 1/2 C cottage cheese
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 1 tsp xanthan gum

Blend all of the ingredients together and then add them to your ice cream mixer, following manufactures directions. When it comes out its like soft-serve or a chocolate shake, or freeze it solid in the freezer. The glycerine & vodka help keep it from freezing rock hard. I like mine best if I scoop it out and let it sit for a few minutes to soften some.

I give this recipe 5 stars because, hello – ice cream, but my husband gives it 3 1/2 stars. He says it’s not sweet enough and needs to be smoother. I think it’s pretty smooth, so…? but I may try more sweetener next time. I’m also excited to modify it and make other flavors.
