Quick-Fix Egg White Muffins (p 332)

The recipe title isn’t misleading you when it says these are super quick to make. I love that they can be FP, E or S. If you’re like me and you struggle with finding FPs or on-plan E options then this is a great breakfast, lunch, or even snack, so have on hand. You can make as few or as many as you want, and they store in the fridge & reheat very nicely. Just throw your veggies, meats, or even cheese, depending on your fuel type, into your muffin tins, top with egg whites and seasoning, and throw them in the oven. Easy peasy! I like fruit, especially an orange or grapefruit for breakfast but I always struggle to know when it okay to add it to a meal, or what protein to have with it, but these pair really nicely with some fruit in an E meal.

These muffins definitely get 5 stars, because they’re easy and delicious.

Creamed Spinach and Bacon-Smothered Chicken (p 219)

This chicken certainly fit the bill for juicy chicken, and how can you go wrong with bacon and spinach? The one thing I did modify in this recipe is that I subbed 1 cup of heavy cream for the cream cheese and water. My husband despises cream cheese, and even though I love it, I don’t like the texture that it leaves when used in a cream sauce, so I’m happy to remove it when I can. I used less spinach than the recipe called for because I didn’t have a lot on hand, which is why you don’t see a lot in the photo. We ate this with a nice big salad that is also not in the photo because we ate it while we waited for the chicken to bake.

This recipe also gets 5 stars, because well…bacon…and juicy chicken. 🙂
