Deconstructed Fajitas (p 56)

I’m not a fan of celery (as in, I won’t eat it) so I don’t use the frozen seasoning blend that a lot of THM recipes call for, but I usually substitute with either frozen diced onions, or diced onion & bell peppers. The latter is what I did for this recipe. We took the suggestion to serve it on top of some cut up romaine very seriously and had this as an S meal. I topped mine with some cheese and sour cream, hubby topped his with extra salad veggies and salad dressing. I’ll have some of the left-overs for lunch another day in a low carb tortilla. Looking forward to it!

This recipe gets 5 stars – it’s versatile (works as an S, E or FP), easy and tasty.

Soft Double Chocolate Chip Cookies (p 400)

I didn’t care for these cookies. Mine flattened out more than I expected, so I’m wondering if there was something wrong with what I did. When I mixed my sweetener I didn’t blend it, I left it granulated because creaming the butter and sugar is usually a pretty important part of the cookie-making process. I’m not sure if that’s what messed them up, or if it’s just that I haven’t yet found a baked chocolate dessert that really satisfies my tastes. I washed them down with a cup of cookies & cream almond milk using one of the new flavored whey powders from THM. I love them as a quick  My husband actually thought they weren’t too bad.

I may give them another try, but for now they get 2 stars. They’re edible, but that’s the best I have to say for them this time around.
