Fluffy White Banana Pancakes (p 339)

These are a pretty reasonable substitute for a carb-laden pancake. The texture isn’t quite right, but smother them in a tiny bit of butter and some sugar-free syrup, or this pretty amazing on-plan blueberry compote, and you’ll never know you’re eating healthy! I am not a huge fan of banana extract, so I left it out, and you’d hardly know there’s a banana in this recipe, but if you like banana, go for it.

For the blueberries, put a cup of frozen blueberries, 1 T lemon juice, and 1 tsp gentle sweet into a pan. While you’re cooking your pancakes, bring them to a boil, and let them cook til they soften and the juice makes a nice syrup. You can remove it from the heat and whisk in 1/4 tsp of xanthan gum if you want a thicker syrup.

These pancakes get 4 stars, they’re pretty good, but don’t quite hit the great mark.

On a side note, I love a lot of the THM products from their store, but I’ve never ordered any of the sweeteners. For a long time I combined a 50/50 mix of Truvia and xylitol in my Nutribullet to make a substitute for Gentle Sweet, but I recently ran across this recipe from Joy Filled Eats and I’ve been making it since then. Using erythritol makes it a lot less expensive overall. I usually buy my xylitol and erythritol in bulk from an Amish store that’s about an hour away, but I’ve also bought the linked brand before and really liked it.

Chicken Satay in a Bowl (p 59)

This is not a flavor profile that we usually go to, but (after dealing with some user error in the prep process) it actually turned out pretty darn tasty. They cayenne gives it a nice little kick, the broccoli slaw makes it super easy, and the dry-roasted peanuts add some nice saltiness and crunch.

I’m giving this one 4 stars for now. I’ll definitely give it another try, but I’m not sure if it will make it into the regular rotation.
