Pizza Grilled Cheese (p 298)
Breakfast today was another coffee Trimmy, and dinner was left over Fried Double Rice while I’m at work(yum!), but for lunch I got to try something new. I never would have guessed that I would be able to have a grilled cheese sandwich as part of an E lunch! I used the last of the Aldi brand cheeses, and one of the pepper jack Laughing Cow cheeses I bought on day 1 for the turkey sandwich. The little bit of butter you’re allowed on the pan was just enough to toast this and give it a little crunch. It really did taste like pizza, the cheeses gave it a nice creaminess, and the pepper jack gave it just the right kick. One sandwich doesn’t make for a full lunch, but since it’s an E you have all kinds of things to choose from to go with it.
This one gets 5 stars. Maybe next time I’ll try a small smoothie along with it, because I will definitely be making this again.
Instant Pot Chicken
One of my favorite ways to save money is to find marked-down meat and fill my freezer. I recently scored 4 whole chickens for about $3 each. I knew that I had a recipe for later this week that calls for pre-cooked chicken, so in a rare moment of planning ahead I pull one out of the freezer yesterday. Today I threw it in the Instant Pot with some chicken broth and seasoning while I made my lunch. Boom, meat cooked for later in the week in about half an hour. If you don’t have an instant pot yet, it is worth considering adding it to your arsenal. We’ve made dinner using a frozen roast, cooked rice, and even boiled eggs in this thing. We love it!
